Groundnut Chutney


Preparation time : 10 minutes

Ingredients

Peanuts : 1 cup, roasted and peeled
Garlic : 2-3 flakes
Green chillis : 3-5 (add according to your taste)
Tamarind : To taste
Onion : 1 small, chopped
Salt : To taste
Water
Oil : 1-2 tablespoons

For seasoning

Mustard seeds : ½ tablespoon
Urad dal/ black gram : ½ tablespoon
Chana dal/ split chickpeas : ½ tablespoon
Cumin seeds : ¼ tablespoon
Curry leaves : 1 twig
Oil : ½ tablespoon

1. Heat oil in a vessel. Add garlic and chillis and stir fry for a few seconds. Add the sliced onions and sauté for 2 minutes on medium heat. Remove from heat and cool.
2. Grind the roasted peanuts, tamarind, sautéed onions, chillis and garlic along with salt and required amount of water.
3. Heat oil in a pan. Add mustard seeds and let them splutter. Add the dals and sauté till they turn golden brown. Add cumin seeds and curry leaves and turn off heat. Pour over chutney.

Note : If you like to add coriander to your chutney, add 1-2 twigs of finely chopped coriander after the onions, sauté for 30 seconds and then continue with the same procedure.
