Almond Milk

Almond milk is a milky drink made from ground almonds. Unlike animal milk, almond milk contains no cholesterol or lactose and can be used as a substitute for animal milk in many recipes. Be cautious not to use bitter almonds. For weight conscious people, unsweetened almond milk is lower in calories than cow's milk or soy milk. (Source of information : Wikipedia)

Ingredients

Almonds : 1 cup
Water : 3 cups
Sugar/honey : 2 table spoons (Optional)
Vanilla essence : ½ tablespoon (Optional)


1. Soak almonds in water overnight.
2. Remove the skin of almonds and grind them with sugar/ honey and vanilla essence.
3. Drain the milk to remove the pulp, which can be used in the preparation of other dishes.
4. Serve chilled.

Option : If you want to use ice cream, pour the milk back into the blender, add ice cream and blend till a soft consistency is obtained.

Variation : Blend in a banana and use a pinch of nutmeg to make a festive rawnog.

Note : This milk will last for 3 days, when stored in refrigerator.
